Chicken is so versatile and a great staple to have on hand. It can be quickly made up into a special evening meal after a long day at work.
Chicken Curry
- 2 tablespoons olive oil
- 1 medium onion chopped
- 3 cloves garlic crushed/3 teaspoons crushed garlic
- 500gm chopped chicken breast
- 2 tablespoons garam masala
- 1 tablespoon ground cumin
- 1 tablespoon ground tumeric
- 400gm can diced tomatoes
- 1/4 cup chicken stock
- rice
- coriander to garnish
- Heat oil in a medium saucepan
- Cook onion and garlic, stirring until onion is soft and fragrant.
- Add chicken and spices, and cook until the chicken is browned all over.
- Stir in the tomatoes and the stock. Bring to boil
- Simmer covered for 20 minutes until the chicken is cooked through.
- Steam or boil some rice to serve and garnish with fresh coriander leaves.
