Kumquats in Brandy

  • 750gm kumquats
  • 2 cinnamon sticks halved lengthways
  • 2 vanilla sticks halved lengthways
  • 3 cups caster sugar
  • 2 1/2 cups brandy
  1. Wash and dry kumquats well and prick each of the fruit. I used a skewer.
  2. Place kumquats, cinnamon and vanilla beans into sterilised bottle.
  3. Combine sugar and brandy and pour over the fruit, making sure to cover the kumquats and Seal.
  4. Place jar in cool, dark place for 2 mths, inverting every few days to dissolve the sugar.
  5. Serve with ice cream, use in pies and puddings and drink the mixture as a liqueur.  Mmmmm !!
