Kumquat Season…. don’t you just love this time of year ?

Kumquat Jam

  • 2 cups sliced kumquats  approx 750gm
  • 3 cups water
  • 1 1/2 cups jam setting sugar
  1. Wash and dry kumquats
  2. Slice in three pieces horizontally and remove seeds.  KEEP SEEDS
  3. Once all are chopped, wrap seeds in a piece of cheesecloth.
  4. Place water and kumquats and the wrapped seeds in a bowl and leave overnight or at least 4 hours.
  5. Place all into saucepan on stove and bring to boil.  Simmer for 45mins.
  6. The mixture should be starting to thicken.
  7. Remove seeds and add sugar and boil for a further 15 mins.
  8. Place a testing plate in the freezer.
  9. Once mixture looks like gel, place a small amount on the chilled plate. If this gel firms, the mixture is ready to bottle.
  10. Place into canning jars and turn upside down until cool.  If planning to make shelf stable, place in the a bath canner for 10 mins.
