Risotto – great weekday easy meal

I hardly ever make risotto, as it is not a popular dish in our house, but I found this recipe and just had to give it a try.  I am so glad that I did.

 

  • 4 tabs butter
  • 1 onion diced
  • 4 rashers bacon
  • 500gm chicken mince
  • 1 cup mushrooms chopped
  • 2 cups amborio rice
  • 1 cup white wine
  • 5 cups chicken stock
  • 1 cup parmesan cheese
  1. In a lidded saucepan, heat the butter and fry chicken, bacon, mushrooms until cooked.
  2. Add the rice and stir until the grains are glossy and transparent
  3. Add wine and simmer for 2  mins
  4. Add stock and stir.
  5. Place the lid on and turn heat to low.  Simmer 10 mins
  6. Stir in parmesan cheese through and serve with extra parmesan
