Sweet and Sour CHICKEN cooked in the slow cooker.

  • 1 tab coconut oil
  • 4 chicken lovely legs (520 gms)
  • 4 skinless chicken thigh cutlets (800gm)
  • 2 medium red onions chopped in wedges
  • ½ cup soy sauce
  • ½ cup pasatta
  • ½ cup pineapple juice
  • 2 tabs firmly packed light brown sugar
  • 2 tabs white vinegar
  • 1 fresh chilli chopped finely
  • 2 cloves garlic crushed
  • 1 large red capsicum chopped
  • 1 large red capsicum chopped
  • 225 gm can pineapple pieces in juice
  • 2 tabs cornflour
  • 2 tabs water
  • 2 green onions

Heat oil in pan, cook chicken until brown. Transfer to slow cooker.

Add all other ingredients, NOT cornflour and water.

Cook covered. On low for 4 hours

Blend cornflour with water, Add to chicken mixture.  Cook for 5 mins, until thick.  Season to taste.

Serve sprinkled with shredded green onion.
