Gluten Free / Sugar Free PANCAKES

Here is one for those who need things to be Gluten Free


  • 3 Eggs beaten
  • 1 cup Buttermilk                           
  • 1 teas Vanilla                  
  • ¾ cup GF SR Flour
  • 1/3 cup Coconut Flour  
  • ½ teas GF Baking Powder           
  • 1 tab Stevia                     
  • 50gm Butter melted
  • Cooking Oil spray 
  • Sliced Banana & Strawberries   


  1. In large jug, whisk eggs, buttermilk and vanilla until well combined
  2. In large bowl, sift flours & baking powder, Add stevia and stir. Make well in centre
  3. Add egg mixture to flour mix and whisk until smooth
  4. Spray large non-stick frypan with oil spray and place over medium heat until hot
  5. Pour ¼ cup of mixture into hot pan, spread to approx. 10cm. Cook for about 2 or 3 mins or until it bubbles. Turn over for another 2 min or until golden
  6. Remove, cover and repeat with all.
  7. Serve with banana, strawberries and maple syrup
