PUMPKIN SOUP for DINNER TONIGHT

I had my groceries delivered this morning and somehow have ended up with what should have been 4 x quarters of pumpkin.  Yes there were 4 quarters, but they were super big quarters, and the ONE pumpkin that I wanted is equal to almost two pumpkins, and SUPER BIG !!

So PUMPKIN SOUP it is ……….

 

  • Half a pumpkin
  • 1 large Sweet Potato
  • 2 Onions
  • Garlic – 2 lge tabs
  • Coriander – 1 tab
  • Nutmeg – 1 tab
  • Cumin – 1 tab
  • Chicken Stock

I peeled and cubed one of the quarters of pumpkin, layered it into the slow cooker, then layered some sliced onion on the top of this, peeled and cubed the sweet potato, layered this on top.  I then did another layer of pumpkin, onion and some more sweet potato on the top.  Placed the herbs in the same dish, and filled with chicken stock.

I have it sitting on the bench cooking away.  Smells awesome, by the way.  I will blend together once it is all cooked and tender.

Looks like there will be enough for many more meals.  Luckily it is nice out of the freezer and comes in handy after a day at the office.
