Gluten Free Coconut WAFFLES

Today we have a little visitor who is Gluten Free, so have made some of these beautiful Coconut Waffles


  1. 1/2 cup coconut flour loosely spooned into the measuring cup.
  2. 1/4 teaspoon baking soda.
  3. pinch of salt.
  4. pinch of cinnamon. (I put in a little extra)
  5. 3 eggs.
  6. 1/2 cup coconut milk
  7. 1/4 cup coconut oil
  8. 1/2 teaspoon vanilla extract.


  1. In a small bowl whisk together coconut flour, baking soda, salt, and cinnamon.
  2. In a medium bowl beat the eggs, then whisk in milk, coconut oil, vanilla, and optional sweetener.
  3. Add the dry to the wet ingredients and stir to combine thoroughly.
  4. Heat a waffle iron and brush with oil/butter. Place 2 tablespoons of batter into each cavity of the waffle maker and cook according to directions until golden brown.
  5. Serve with your favorite toppings like fresh fruit, whipped (coconut) cream, chocolate chips, or maple syrup.
